A good recipe for this weekend. Looks great!
Sorry about missing last week. I don’t have a good excuse–I was just in an off mood and for some reason couldn’t get enough focus. I kept pushing back and procrastinating in writing the post until I finally just decided that it wasn’t going to happen. I have been doing quite a bit of both cooking and baking to try and perk myself up though, so you’ll get to see the product of that in the coming weeks.
When I cook and bake, I usually have a habit of making quite a bit of food at one time. This is mostly so that I don’t have to do very much heavy cooking throughout the week. I know it’s not for everyone, but we’re staunch believers in meal prep and leftovers round here. As such, I try and re-purpose the leftovers into new dishes, just to mix things up…

I’m always looking for something fun to do with my leftover Corned Beef. I know it’s always good the next day just as is, but we so seldom have Corned Beef I really like to do something special. These Corned Beef Fritters are it!

I am so very, very, very excited. I’m practically bursting at the seams. As I’m writing this post right now, I’m beaming from ear to ear.
Go ahead and ask me what’s put me in such a good mood. Go on. Ask. I will answer your question with a question:

These are fantastic.
One of the very earliest recipes I did on the blog was one for meat pies that I make for my sister. (Don’t go back in the archives to look for it, I beg of you. My photography was abysmal in those days.) I started out with meat pies because for quite some time, I’ve had somewhat of a minor obsession with them, in just about any form. I don’t know why. Carbs and meat are perfectly fine all on their own. But for me, when you out them together they can get elevated to something even better.
The pretty cool thing about the meat pie is that practically EVERY cuisine, culture & region has their own rendition of it. In Latin American cuisine, they have empanadas. In Canada they have Tourtiere. In Lebanese cooking they’re called sfeeha. Back where I come from in Michigan they’re called pasties. In Louisiana…
